Mission

The Wellness Committee provides leadership, planning, and event management to improve the quality of life for the KCC campus community in all aspects of well-being.
 

Vision

We envision a better, healthier future for our community.

We envision a growing awareness of and participation in healthy activities and behaviors for staff and faculty at KCC.

We envision the College growing into a role of leading by example to increase wellness activities and opportunities for future generations of students and the community.

We envision growing into roles that support our physical, social, emotional, and financial well-being.

We envision our activities fostering a college-wide sense of community, camaraderie, and wellbeing.
 

Goals

  • Leverage funding opportunities from community, regional, or national partners through grants or other options.
  • Accomplish physical changes to the college campus that will be used sustainably by faculty, staff, and/or students.
  • Accomplish long-term physical changes to the KCC campus that will be sustainable for use by the general public.

Targets

  • Attain at least one grant within three years.
  • Hold a wellness event at least once each term, minimum four per year.
  • Design a modular plan for a campus walking trail that may be constructed in segments.
    • Design in coordination with Art on Campus Committee to include artistic elements.
    • Design with intent to include exercise stations.
  • Wellness Center design in the hopper for available space such as LRC, bookstore, etc.

Welcome to September, it’s almost fall y’all!

Welcome to September and the start of fall. As we welcome in September, I am reminded of so many fun and exciting things to do during fall. As the apple trees bear fruit, take some time to pick fresh apples, make some caramel apples or bake a famous grandma’s homemade apple pie. Why not bundle up and go watch one of our local high school football games and sip a thermos of hot apple cider or cocoa? How about crafting some fall leaf sun catchers or creating art with pumpkin seeds? If you love decorating for fall, what about collecting up some acorns and pine cones for fall decorations or selecting some pumpkins from the local pumpkin patch?

Fall provides opportunity to get a fresh start and brings its own unique and beautiful opportunities to experience life, now get out and enjoy it!

One pan apple butter pork chops

Apple butter pork chops are the perfect one pan recipe for fall and winter. These skillet pork chops with apples are so juicy and flavorful when cooked in apple butter. It’s just so delicious, and there is only one pan to clean.

Ingredients:

  • 2 pork chop fillets
  • Salt and pepper
  • 3 tablespoons butter divided
  • 15 ounces ½ jar apple butter, divided
  • 2 apples cored and sliced. No need to peel them
  • 2 tablespoons packed brown sugar
  • 1 teaspoon ancho chili powder or chili powder
  • 1/3 cup heavy cream

Instructions:

  1. Season both sides of each pork chop with salt and pepper.
  2. Melt 2 tablespoons butter over medium high heat in a large skillet. Add the pork chops and cook each side for 3 minutes. Place pork on a plate and allow to rest while you cook the apples.
  3. Using the same skillet, melt the remaining 1 tablespoon of butter. Add the apple slices and allow to cook until soft, about 5 minutes. Pour in ¼ of the jar (7 ½ ounces) of apple butter, brown sugar, and chili powder. Stir to combine. Add in the cream and continue to stir. Bring to a light boil.
  4. Add the pork chops, pushing aside the apples to make sure the bottoms of each pork chop are touching the skillet. Spoon a tablespoon of apple butter into each side of each pork chop as you cook.
  5. Cook each pork chop for about 4 more minutes on each side, adding a tablespoon of apple butter to each side as you cook. Cook until pork is cooked through to your liking.
  6. Serve hot with the apple mixture spooned over the pork.
  7. Enjoy!

The Poker Run/Walk Event is coming during Convocation!

We have some exciting news! With Convocation right around the corner, there is an exciting opportunity awaiting our KCC family. The Wellness Committee is excited to share about the upcoming special event being held during Convocation 2021. This year during Convocation, from 11 am – Noon, the Wellness committee will be hosting the first annual Poker Run/Walk Event. Yes, you read that correctly, we will be engaging in a fun, competitive Poker event during Convocation this year. Keep your eyes peeled for more information in the coming week.
